Brine
- Fill to cover vegetables completely.
- Leave 8–10 mm headspace.
Manufacturing Procedure
Step 1 – Raw Material Preparation
- Sort and grade fresh gherkins.
- Remove damaged or oversized fruits.
- Wash thoroughly using potable water.
- Final rinse with chlorinated water (50–100 ppm).
Step 2 – Prepare Brine
- Add water to stainless steel kettle.
- Dissolve salt and sugar completely.
- Bring to boil.
- Add vinegar.
- Heat to 85–90°C.
Step 3 – Jar Filling
- Place spices into sterilized jars.
- Add onion and carrot slices.
- Fill with gherkins.
- Pour hot brine (80–85°C).
Step 4 – Exhausting
- Maintain product temperature above 75°C.
- Ensure proper vacuum development after sealing.
Step 5 – Sealing
- Immediately cap jars using lug caps.
Step 6 – Pasteurization
For acidified gherkins:
