Gherkins

  • Fresh graded gherkins: 6.0 kg

Brine / Pickling Solution

  • Water: 2.5 L
  • White vinegar (10% acidity): 1.5 L
  • Sugar: 750 g
  • Salt (non-iodized): 250 g

Spice Mix

  • Yellow mustard seeds: 40 g
  • Black peppercorns: 20 g
  • Dill seeds: 20 g
  • Fresh dill sprigs: 100 g
  • Bay leaves: 15 leaves
  • Coriander seeds: 15 g
  • Allspice berries: 10 g

Vegetables

  • Onion slices: 500 g
  • Carrot slices (optional): 300 g

  • Peppercorns: 0.5 g
  • Coriander seeds: 0.5 g
  • Bay leaf: 1 piece
  • Fresh dill sprig: 1–2 pieces

Brine

  • Fill to cover vegetables completely.
  • Leave 8–10 mm headspace.

Manufacturing Procedure

Step 1 – Raw Material Preparation

  1. Sort and grade fresh gherkins.
  2. Remove damaged or oversized fruits.
  3. Wash thoroughly using potable water.
  4. Final rinse with chlorinated water (50–100 ppm).

Step 2 – Prepare Brine

  1. Add water to stainless steel kettle.
  2. Dissolve salt and sugar completely.
  3. Bring to boil.
  4. Add vinegar.
  5. Heat to 85–90°C.

Step 3 – Jar Filling

  1. Place spices into sterilized jars.
  2. Add onion and carrot slices.
  3. Fill with gherkins.
  4. Pour hot brine (80–85°C).

Step 4 – Exhausting

  • Maintain product temperature above 75°C.
  • Ensure proper vacuum development after sealing.

Step 5 – Sealing

  • Immediately cap jars using lug caps.

Step 6 – Pasteurization

For acidified gherkins:

Step 7 – Cooling

  • Cool gradually to below 40°C.
